Welcome to the Bakery

​We use local, organic, sustainable sources and ingredients whenever possible. All of our goods are handmade in our Gardiner, ME kitchen, with intention, love, and an abiding sense of humor. Availability of any and all items will change based on supply and demand. New items will be added as opportunity and supply allows. We are happy to consider all requests and recommendations.

Because we are primarily a Community Supported Bakery, our in store offerings are limited and very much tied to the CSB schedule. That said, we do offer plenty of bread in-store for purchase by the public. Below is our current schedule of in-store offerings. Bakery In-Store Schedule

Friday: Fougasse and Piatta

​Saturday: Baguettes & Member Share Bake Day - a variety breads from our full share menu, including our Panem Domus, Cardamom Honey Rye, Oat & Honey Sandwich, Yankee Cornbread, and our infamous Cinnamon Raisin Bread

Sunday: Sandwich Loaves (rotating varieties) and our #75 Country Boule

Monday: Whole Bagels (many flavors), available starting at 7am, and Orpheline Batards

Tuesday: Member Share Bake Day - a variety breads from our full share menu, including our Panem Domus, Cardamom Honey Rye, Oat & Honey Sandwich, Yankee Cornbread, and our infamous Cinnamon Raisin Bread

Wednesday and Thursday: Closed

Naturally Leavened Bread goods
​15 - 24 Hour Fermentation
Locally and Responsibly Sourced Ingredients

        
~ all Maple and Honey products are Maine 

        ~ we also use organic cane sugar (in jam) & o
rganic molasses
        ~ our Oats, Rye, & Whole Wheat are Maine Grains
        ~ our other wheat flours are King Arthur Flour

        ~ Brown Rice Flour & Semolina are Bob’s Red Mill

        ~ additives like raisins, coffee, & choc chips are 
organic and fair trade
        ~ additives like garlic & green chili (all veg) are local
        
~ dairy: organic soymilk, local dairy milk, Cabot Cheddar,Jack, & butter, certified Italian Parmesan
        
~ oils: 100% EVOO, organic Coconut & Sesame oil

We do process nuts & seeds (incl Flax and Sesame) here
We do our best to stay local and/or organic whenever possible and shop for clean sources
